In all their goodness, avocados are not only incredibly healthy, but also a lot of fun to cook with!
Case in point, my new cooking inspiration post ! While doing some Pinterest surfing, I came across various avocado eye candies, among which, one that suggested baking an egg in an avocado. SAY WHAT ?! Is this actually possible ? I found out it actually is, and my stomach was blissfully grateful !
SO HOW TO DO IT ?
Slice the avocado in half, take out the pit, scoop out about two tablespoons of flesh from the center to make room for that fresh egg, which will smoothly fit inside the pretty avocado.
Place in the preheated oven and bake for 15 to 20 minutes, making sure the egg whites are propperly cooked.
Et voilà !.
Although the combo is a dish commonly used for breakfast, I decided to add it to a kale and smoked salmon salad for a powerhouse lunch. Add your favourite vegies inside, sprinkle a bit of goat cheese, lemon, vinegar, olive oil and you're good to go TO HEAVEN !
I don't know about you, but I'm off to the kitchen. Time for lunch !
