Raw Vegan Cashew Cream Cake Madness !

OH SO YUMMY ! 

And guilt-free !! I honestly feel I have discovered the Holy Grail of desserts! Raw cakes galore in my freezer, please ! 

So it all started with a random Pinterest surfing , after having stuffed my kitchen with a bunch of superfoods, nuts, dried fruits and natural oils. I needed a creative way of eating all those, and that's when it hit me- RAW CAKES ! 

So let me make the introductions. Meet my two delicious beauties aka first trials of raw cakes. Yes, both two variations I'm showing you here are made with cashew cream, but to take it up a notch I went for crazier colours - green, purple, red,  you name it- I decided to bring spring to my plate ! 

Simplified, all you need for creating something like this are nuts, dried fruits, coconut oil and a power blender. Then you may add whatever extra ingredients you wish in order to give them an extra personality.

Ok, things might be juuuust a little bit more complicated, and in order not to confuse you, HERE's the professional recipe I inspired from when I did my first cashew & mint cream cake. Thanks to super Beth from tasty-yummies.com for always being such an incredible inspiration ! 

My version of the recipe is:

Crust:
  • 5 figs
  • 5 prunes
  • 1 1/2 cups raw nuts : walnuts, almonds 
  • 1/4 tsp sea salt
  • 1/2 cup raw carob ( sweeter than cocoa powder) 
Filling:
  • 1 cup raw cashews soaked for a few hours ( I also added peeled almonds so I usd boiling water to help them soak faster )
  • 1/3 cup coconut oil, in liquid state
  • 1 banana
  • 4-6 tablespoons water (you may want a little more if it is too thick)
  • 1/2 teaspoon sea salt
  • 1/4 cup fresh mint
  • 2 large handfuls organic baby spinach
For my second trial, I did a different variation for the filling, mixing wild berries ( blueberries and rasberries) with the soaked cashews and almonds. 

I left the cake in the freezer overnight and then it was perfect ! I have to warn you though, just a small piece will fill you up immediately ! The ingredients are super heavy actually, so eat it moderately but ENJOY it ! 

Go ahead and try this funky recipe, gals ! It's super refreshing, sweet, tasty and incredibly healthy ! Topping it with fresh fruits will take you to heaven instantly !
